2015 – Grandma’s Christmas Cake

Jannine shares her Grandma’s Christmas Cake recipe:
This is my favourite Christmas Recipe:  My Grandmother use to make this and now I see it is popular on all sorts of Recipe sites on the Internet.  Grandma lived on a Farm way out in the Country.  She would only go to town once per month if she absolutely had to.  Other than that, they lived off the land.  Grandma baked every day and supplied 3 meals per day, plus morning and afternoon tea to the Shearers who worked on the Farm.
This was her tried and true Christmas Cake Recipe.  It has no Butter, no eggs and no Sugar:
1 KG of Christmas Cake Fruit Mix
2 Cups of Orange Juice – Grandma use to use Freshly Squeezed.  You can substitute with Apple Juice, Cranberry Juice or other Juices, as long as it is 2 Cups and to your taste.
Soak the Christmas Cake Fruit Mix in the Juice for at least 24 hours in a bowl covered with Cling Film or Tin Foil.  Preferably at room temperature (not in direct sun)
Prepare a medium to large Cake Tin by greasing with Butter or spray with non-stick spray.
Put a disk of Baking paper in the bottom of the Cake Tin
Grandma also use to put parchment paper around the inside of the Tin, but I don’t.
When ready to Bake your Cake:
Pre-heat oven to 150 degrees C
After the fruit has soaked for at least 24 Hours, sift in the following ingredients:
2 Cups Flour
4 Teaspoons Baking Powder
1 Teaspoon Cinnamon
1 Teaspoon Allspice (in Gran’s Recipe Book – it says Christmas Spice)
Freshly Grated Nutmeg to your own taste
Mix well to ensure all dry ingredients have been mixed in well.
Pour into prepared Cake Tin.
Place the Cake in the middle of the oven and Bake 30 minutes at 150 degrees C.
After 30 minutes, turn the oven down to approx. 120 degrees C and bake a further hour.  If the top is cooking to fast, place some tin foil over the top of the Cake Tin.  It depends on your Oven.  When I am Baking this Cake, I check it regularly by placing a skewer in the centre.  If the skewer comes out clean, the Cake is cooked.
Once cooked, turn out onto a wire rack to cool.
My Grandma use to cook this Cake all year round.  At Christmas time, she would get all sorts of Nuts and Fruit and place it on top of the Cake, then glaze with warmed home made Apricot Jam.
