2013 – Rose’s Never Fail Pavlova

Rose (Ellerslie store) tells me she makes this Pavlova every year – a true favourite in her family!

4 egg whites
1 cup sugar
2 dsp cold water
1 tsp vanilla essence
1 tsp vinegar
2 extra Tbsp sugar

Beat egg whites and cold water till stiff.

Add essence and vinegar.

Add sugar gradually and beat till thick and shiny.

Fold in extra sugar.
Put on a well greased tray on well greased baking paper.

Bake in oven at 150C for 30 minutes, then 125C for a further hour.
When cold whip cream (add a little brandy and icing sugar to taste). Then decorate with strawberries and grated chocolate (white or dark). Add a piece of holly for decoration.
